About Our Bomboloni

A bombolone is an enriched, slow-proved dough — closer to brioche than to a cake doughnut — fried until golden, rolled in sugar and filled through the side. The crumb should be light enough to tear rather than crumble, which is why the dough gets a long, cold rest before it ever sees oil.
