About Our Margherita “DOP” Pizza

A margherita is a test of ingredients, not technique tricks. We use San Marzano tomatoes crushed and used raw, so the sauce keeps its sweetness and acidity, and fior di latte for a clean, milky melt that will not flood the base. Parmigiano Reggiano adds savoury depth, extra virgin olive oil carries the aroma, and basil goes on so it stays green.

Because there is so little on it, the dough has to be right. Ours proves slowly, which is what gives the crust its blistered edge and light chew. Order it on the New York base for thin, foldable slices, or on the Roman base for an airier, crisper bite.
