About Our Diavola Pizza
Diavola — “the devil’s pizza” — is a Southern Italian classic built on spicy cured salami. We use a Genoa salami with real chilli heat, then push it further with a pepperoncino oil we infuse ourselves in the shop. The oil is brushed on after the bake so the chilli stays bright and aromatic instead of turning bitter in the oven.
Underneath, the formula is deliberately simple: uncooked San Marzano tomato for acidity, fior di latte for a clean milky melt, and Parmigiano Reggiano for salt and depth. Basil goes on last. Nothing competes with the salami and the chilli, which is the whole point of a Diavola.
How Hot Is It, Really?
It is a warm, building heat rather than a shock — closer to a good spicy soppressata than a hot-sauce pizza. If you want it milder, ask for the pepperoncino oil on the side. If you want more, add a pack of Mike’s Hot Honey, which plays surprisingly well against the chilli.

Cool it down with a mortadella, pistachio and burrata Roman on the same table, or keep it classic with the NY Pepperoni Pizza. A garlic aioli dip and a Sicilian cannoli finish the meal properly.
